How to cook dinner in 15 minutes: Skillet Enchiladas
Today I am sharing one of my family’s favorite meals: Lazy Man Enchiladas, also known as Skillet Enchiladas. This meal can be done in 15 minutes–skillet to mouth!
First, break up your ground meat into a skillet. I use a cast iron skillet, because I like the way it heats through (which makes the whole pan hot) and how it cooks meat. I add salt and pepper at this step. I layer flavors through the duration of cooking.
While the ground meat of your choice is browning, chop your toppings. This is where you save the most time when creating this yummy dish for your family. We typically top our skillet enchiladas with tomatoes, onions, radishes, cheese, lettuce, guacamole, Cuban style black beans, and sour cream. The more toppings, the more delicious!
At this time you will also need to cut your soft tortilla shells into 1in wide and 3 in long slices as you see below.
Once your meat is browned this is when you add you enchilada sauce into your skillet. I typically use Old El Paso. It is always available at our local grocer–The Commissary, because Military Life. 🙂
After you have added the enchilada sauce to the skillet allow it to simmer for around five minutes, then fold your pre-cut tortillas to the skillet. You can allow this to simmer as long as you would like, but if you are short on time you can serve once all of the tortillas are covered with sauce.
Voila! Dinner is served.
