Sheet Pan Pancakes
School mornings can be super hectic especially in the early days of the back-to-school routine. Since adding preschool into the mix we had to adjust our morning routine. To make our mornings go a little more smoothly I started preparing make ahead breakfasts that could easily be taken on-the-go.
I noticed the gap in our routine with my four-year-old who consistently asks for five more minutes of sleep, ha. I decided a make ahead breakfast was a simple adjustment that could save us a ton of time.
Sheet pan pancakes are the simplest pancake to make and the BEST time saver. You can even use your boxed mix to make this delicious recipe. Follow the box’s mixing directions then put it into a buttered sheet pan and bake. That’s it! The bigger you make it the longer it will last. I love to add fruit and chocolate chips to ours. My middle schooler likes to take it to school for a snack.
How to make sheet pan pancakes:
One of my FAVORITE things to do is bake with my little. She loves to help (by licking the spoon ;)). I love that we are spending concentrated time together, she is learning basic survival skills, AND the confidence she gets because she feels independent!
You probably know by now, I add a little extra to anything and everything to make it halfway homemade. We use a box mix for this recipe, but I like it to have the homemade taste. So, I always add buttermilk, egg, vanilla, and a little sugar. I don’t like the floppy pancakes you get with the “just add water” mixes.
Baking tools:
Preheat your oven to 425 degrees then butter your sheet pan. This recipe doesn’t call for non-stick oil and to be honest I haven’t ever tried the spray.
My preschooler helps me by cutting the fruit. While she gets in some gross motor skill practice, I mix the ingredients.
Baking Tip:
If you have time, allow your wet ingredients to come to room temperature. It allows your baked goods to become fluffier!
Once the ingredients are mixed pour it into the buttered sheet pan. Next is the fun part. Add your fruit/chocolate chips to the top.
You could do so many cool things with this recipe and make any occasion special. Two of my favorites are a flag for 4th of July and strawberry hearts for Valentine’s Day.
Once you have your pattern laid out just pop them in the preheated oven for 15-20 mins or until golden brown. I know mine are ready to come out when the edges are pulled away from the side of the pan.
You just have to cut the pieces and store in an airtight container. (Bonus if it doubles as microwave safe!) In the mornings before you/your babies head out into the world, you or (even better) your kids can warm in the microwave for a hot made ahead breakfast.

Ingredients
- 3 cups of boxed pancake
- mix replace water/milk with buttermilk
- 1 egg
- 1 tablespoon sugar
- 1/2 teaspoon vanilla
- 2 tablespoons of butter or more depending on pan size
Optional:- Strawberries Blueberries
- Bananas
- Chocolate Chips
Directions
- Preheat oven to 425
- Butter sheet pan
- Mix ingredients (for best results use wet ingredients at room temperature.
- Pour batter into buttered sheet pan
- Chop fruit and place on top of the batter as you desire
- Allow to bake 15-20 mins or until the sides have pulled from the sides of the pan.
- Serve and enjoy or cut into squares and put in a freezer to save for later.
